Reviewed Gluten Free Buttermilk Buckwheat Pancakes

    Saturday, Nov 1, 2014 on Food.com

I';ve been making these almost every Sunday for five years so I';m updating my review.
These are really tasty pancakes, even better than wheat flour pancakes. For the non-buckwheat flour I use a blend of brown rice flour, potato starch and tapioca starch and we add blueberries or black currants. Sometimes I have to adjust the th...

Reviewed Pumpkin, Almond, Chocolate Granola Bars (Gluten Free)

    Friday, Aug 29, 2014 on Food.com

I was looking for ways to use my last pumpkin from last summer (I live in New Zealand) and these bars caught my eye. I had just two cups of oats in the house so food.com worked out 40% of the recipe for me. By making a small batch I was able to bake them in my bench top oven.
I used more pumpkin and no applesauce, used oat bran instead...

    Reviewed Harvest Pumpkin-Spice Bars

    Tuesday, Aug 19, 2014 on Food.com

Friends were going to drop over last night and I wanted to make something quick. I had a pumpkin to use (I don';t think canned pumpkin is available in New Zealand) and wanted a pumpkin chocolate chip bar so I chose this Harvest Pumpkin-Spice Bar recipe.
I cooked 8 oz of small chunks of pumpkin in the microwave for six minutes, let ...

    Reviewed Tap Water

    Wednesday, May 14, 2014 on Food.com

Great recipe. It reminded me of when my sister, living in Italy, offered her 3 year old a choice of water (from the tap) or aqua (bottled water from the fridge)."

Reviewed Hot Cross Buns (No ABM)

    Monday, Apr 14, 2014 on Food.com

The instructions were very clear and easy to follow.
These were my first try at Hot Cross Buns and they turned out very well in spite of a few glitches. I used a rectangular Pyrex pan about the same as the recommended size and made 20 buns to fill the space. They were a little cramped so next time I';ll use my next biggest pan. <...

Shared Recipe Perfect Easy Peel Hard Boiled Eggs

    Tuesday, Apr 2, 2013 on Food.com

"If you are frustrated by hard boiled eggs which are difficult to peel, try steaming them instead of boiling. No vinegar, no timing issues. Just steam for your normal boiling time, they come out perfect, even very fresh eggs which are the worst to peel.
I found this recipe on Backyard Chickens and figured if anybody knew how to boil eggs they would..."

    Reviewed Microwave Strawberry Jam

This was the first time I made jam in the microwave and I must admit I prefer stirring on a stove but the jam came out perfectly. Jam from fresh strawberries is absolutely delicious."

    Reviewed Applesauce Oatmeal Muffins

    Saturday, Sep 22, 2012 on Food.com

Any recipe that can stand up to as many changes as I made and still taste good is a keeper.
I used an all-purpose gluten free flour mix instead of wheat flour (if you are coeliac, make sure the oats are certified gluten free). I added 1/2 cup of chocolate bits and 1/4 cup of cocoa. Next time I'm going to grind the oats in a food processor fir...

Reviewed All Purpose Gluten Free Flour

    Monday, Mar 5, 2012 on Food.com

This is a great all purpose recipe, I use a similar one all the time. If you use brown rice flour instead of plain rice flour it becomes nutritious, otherwise it works well but is lacking in nutrition.
Five stars the way it is, maybe eight with brown rice flour."

Reviewed Old Fashioned Home-Made English Crumpets for Tea-Time

    Tuesday, Feb 7, 2012 on Food.com

These are really good. I may have made them a little thinner than in the recipe but our scale broke and we are waiting for a replacement and I don't know if I had the right amount of flour. The recipe made 22 instead of 18 but we like having two for breakfast on Saturday so that was fine. Store bought crumpets in New Zealand have far too much salt...

Reviewed Easy Peanut Butter & Chocolate Chip Cookies

    Wednesday, Jan 25, 2012 on Food.com

I found this exact recipe in a magazine. I couldn't believe it would work but tried it and found the cookies excellent. They even looked exactly like the picture on the cover. I weigh the dough so they all come out exactly the same. The hardest part of making these cookies is measuring out the peanut butter! My sister made them with low fat peanut...

    Reviewed Microwave Caramels

    Friday, Jan 6, 2012 on Food.com

Wow, these are just as good as the traditional painstaking boil-on-the-stove and keep an eye on the thermometer version. My second batch was perfect, if a little soft. I cooked in a large pyrex measuring cup which is nice and deep and did stick a thermometer in it after six minutes then zapped it for another half minute. I'll try seven minutes ne...

New Topic silicon ice cream spoons--not invented yet in Kitchen Gadgets & Appliances

    Sunday, Jul 3, 2011 on Food.com

"I love my silicon basting brush, Silpat and spatulas, got rid of my muffin pans after a few uses, hard to clean and muffins turned out soggy, not crisp on top.
