"These are wonderful! I made the following changes. Instead of 1/4 cup of oil, I used 3/4 cup of applesauce. The second batch, I was out of crushed pineapple, but had a can of mandarin oranges; The mandarin oranges have much more juice than the pineapple and made the muffins INCREDIBLY moist. "Great tasting bread! My kids & hubby loved it as did I. I used egg replacer instead of flax, 1/4 cup applesauce instead of oil, "white" whole wehat instead of all purpose. Just for a bit of delight, I spread the teeny-tiniest bit of butter on top and then glazed with a thin layer of honey after taking it out of the oven."
