"I was a little leery of soaking the turkey in tea for two days, but it produced a juicy, flavorful bird. It was a big hit. There seems to be some parts missing to the recipe, however. "If you don't "temper" the butter/yolk mixture, the it will coagulate into chunks, as Michelle mentioned below. Add some of the egg white/buttermilk mixture to the butter/yolk mixture a little bit at a time and mix, to mix the two without causing the butter to lump.
These are awesome pancakes, but I like my batter a little runnier."
