    New Topic Question:Gumbo Base (Aka Roux) in Cooking Q & A

    "Gumbo Base (Aka Roux)
    I made the roux with unsweetened butter and flour and stirred it for 40 minutes. I noted the recipe said 15 -17 minutes until completion. Soooo....my roux was a rich dark caramel color, not a deep, dark chocolate as the recipe said it should be. I finally too..."
