"Did this as a side dish today and my hubby likes it although it was a little cold by the time I served it... Not sure why but it took me 1 hr 15 min to get it cooked and softened... for the seasoning, I added in half applesauce and half margarine and I added in bacon bits and more parmesan cheese on top of it when serving. "Did 12 muffins today with different fillings.. I used blueberries, banana, raisins and chocolate chips. Have so far tried the chocolate chips (2 of them! and it's not bad at all! Only thing is the texture which appeared a little lumpy and aldo perhaps I left it in the oven for 1/2 hour, the bottom was slightly burnt although I greased the pan bef..."

"My DH loves it although he feels it's a little salty prob due to my adding too much garlic salt in place of salt and pepper... also my sauce tend to be a little dry. But overall, thumbs up for this dish!! "

"Mine came out slightly burnt and salty... I used a microwave for about 20 min as suggested by Barbara and also instead of using garlic and pepper I used garlic salt. Was also quite dry... Perhaps it's just me as I was encouraged to try this recipe due to the good response here. Have tons of eggplants in my fridge and will prob try other eggplant r..."

"I love fried rice... in fact I've been cooking it since I picked up cooking. To add more aroma, you can add in oyster sauce / chinese wine... I usually add in diced carrots and salted preserved prawns and flourish it off with sliced egg strips. Fried rice has been our staple food and we have it at least once a month!~ "
