A little dry, so bake it 45 minutes with a removable bottomed tube pan. I put a bit more cinnamon and added chocolate chips into the streusel. The glaze is too gooey with just the maple syrup. I had to add some milk, a dash of salt and vanilla extract to it to make it drizzable, and I'll cut the maple syrup in half next time.

The ginger snap crust is a bit too hard, but the filling is wonderful. I used coconut milk ( from the can) instead of half and half and added 1/2 teaspoon of coconut extract. The custard cream is easy to prepare and thickens quickly.

Don't know why some reviewers find these wanting. They are a more nutritious change from the traditional rice crispier treats. Yes, they are gooey to make, but that's the nature of this recipe. I added some salted mixed nuts to it and patted them into a 9 x 9 inch pan to make thicker bars. Perfectly yummy."

Reviewed Pecan Bars - America's Test Kitchen

    Friday, Nov 30, 2012 on

I own the America's Test Kitchen Family Cookbook, and made these for Thanksgiving. I doubled the recipe and put them into a 13 by 9 inch pan. The bars were fought over by my family at the big event. Luckily, I had tasted one before I took them to the holiday potluck, because I sure didn't get another piece!
