    About Me

    Hi, as some of you know, I have been here a while, I love this site!  My husband Ben and I recently moved from Boston to Apex NC.  Because of his job we do a lot of moving around though so we're not sure where we'll be a week from now! LOL!  I'm originally from Colorado and have a grown son who lives in Grand Junction.  I would eventually like to live back in Colorado or out west somewhere, but for now I'm content traveling around and seeing new places.  Due to health issues I have changed my diet quite a bit over the years, you'll notice my recipes start out as regular fare and become healthier as the years pass.  Most of my recipes are easy and quick.  I hope this site is here for many years to come, it's the only place I go for recipes.

    Favorite Foods

    I like to cook, but I really really love to eat. I lean a lot toward hot and spicy dishes, but also love most of the traditional southern down home cooking as well. I am completely addicted to cheese but don't eat it much anymore due to my diet. I have had to learn to find other foods that I can substitute and think I have done a pretty good job.
