    Reviewed Mexican Casserole - 6.5 Weight Watcher Points

    "I enjoyed this recipe. There was only the regular sour cream on hand, but next time I will try the low fat sour cream and add Rotel tomatoes. Definitely making this Mexican Casserole again.     About Me

    My husband, children and I own our own business, making and bottling vodka on Treasure Island in San Francisco. (SFvodka)

    I'm trying to come up with great food recipes with our vodka in the recipes so I can post it on our website.

    I have many passions in life and often finding something new I haven't tried.   Spending time with family...pizza parties, dancing and playing games is at the top of the list.  Spending time with my horse, Jasmine. I love to scrapbook and have devoted a bedroom to my hobby.  I love to cook, but not every day.  Sailing in the San Francisco bay on our boat is amazing on a beautiful day.  Traveling, reading and doing things with friends are all a regular routine.

    I have designed cakes for fun and won a ribbon.

    My husband and I have 5 children, 2 boys, 3 girls.  I love to cook for my boys and when they come and ask me to make their favorites I am happy to oblige.  My favorite person to cook with is my son-in-law, because he makes cooking fun and he makes me laugh.

    Pet peeves...gossip, rudeness, lack of manners, the stinken phone calls people think they must share with the rest of the world. What happened to kindness and consideration and respect.  I have felt this way my entire life and I have seen it go drastically down hill.  Adults and children alike are guilty.  Sometimes I want to rip their arms off and beat them with them until they come to their senses...Oops, I

     

    Favorite Foods

    I love to make my homemade spaghetti sauce, for spaghetti and lasagna. Beef Stroganoff is one of my favorites to make, but I often change it each time I make it.  I have won 3 chilli contests.  My family askes me often to make my 2 soup recipies and mac and cheese.  My son-in-law has guided me outside my box, and I've become more adventuresome by trying recipes posted online. It has opened a whole new world to me beyond my cook books...I have to admit that recipes inspire me, but I often will change a recipe up when trying it.  I turned my chicken paprikash into the most amazing burritos.  My favorite snack food is popcorn.  I pop it in olive oil and drizzle on when popped, melted butter and olive oil mixed...and a little salt.  

    When going out to eat I usually pick the dish that is the most unusual on the menu. I love all kinds of food. When tortilla soup or french onion soup are offered on the  menu I will usually order it, because they are my favorites and always so different at each restaurant. I adore pumpkin and squash ravilolis and have it whenever it's on the menu.

    I enjoy Italian, Mexican, Chinese, Thai, Indian, French, some Japanese, Cajun and American cuisine.
