Mad chef since the age of...I don't really remember ever NOT cooking! Love ethnic cuisines, and really great food that can be prepared quickly w/o 12 hrs of prep and 2 sous chefs and a garde manger! Have taken extensive Asian and Indian cooking courses, would like to tackle pastry next. Real pastry.
I hate: mixes, artifical flavoring, or desserts that look spectacular but taste like sweet air. I love bourbon vanilla, Burgundy chocolate (by Guittard) Amano and Valhrona chocolates for cooking. I don't even temper the Valhrona 70% for dipping---just put it in a heavy pot on the lowest setting on my electric stove. And yes, Dorothy, you CAN cook great meals on electric heat!
