"This dish is wonderfully delicious! Because I used organic brown jasmine and a rice cooker, I had to nearly double the amount of coconut milk and stir frequently to prevent it from scorching. My vegan son added raisins to his serving. It was so rich and creamy with the subtle taste of coconut. We will definitely make this again, although I woul..."

"Very tasty! To coat the wedges more evenly, I put the oil, spices, and the potatoes in a zip-lock bag and shook it until it was evenly distributed. I placed the wedges on parchment paper so they browned nicely and clean up was a breeze. Thanks for posting :"

"This is really delicious! I sauted the onions and garlic first, then added the tomatoes and fresh mushrooms, before adding the zucchini and only cooked the zucchini till al dente. I also increased the sauce to 15 oz., but didn't have to drain it because the zucchini wasn't mushy. Definitely a keeper -- thanks for posting!"

I used all broth instead of the water/broth mix, brown rice, added more onions, and chopped baby portobello mushrooms during the cooking so they would soak up the flavor. I wasn't sure how the brown rice would be, but it was very flavorful. Family loved it -- will defi..."

"Really delicious chili! I did make a few changes: I substituted TVP for the meat since my family is vegetarian (except me!, omitted the jalapeno, added several garlic cloves plus powder, decreased the cumin, increased the sauce, substituted beef stock for the water to give the meat flavor, and added pinto beans. As I said, really delicious! Th..."

"Delicious! I used canned tomatoes, added 3-4 cloves of garlic, about 6 basil leaves, and used only chicken broth in a food processor, then cooked about 20 minutes. I used half and half instead of heavy cream, and about 1 T butter. So simple, but so good! Thanks for posting. :"

"Oh, this is a wonderful dish -- it will definitely be in the rotation! I did make a few changes: increased the spinach to 1#, and the mushrooms to 10 0z. I used seasoned dressing cubes for the bread, softened with a little melted butter, and a blend of cheddar and monterey jack cheeses. Next time I will use gruyere. My 17 year-old vegetarian s..."
