"I actually omitted the apple cider vinegar and love just the taste of the salt and olive oil. Such a great recipe for anyone on a reduced carb diet. Definitely fills the need for crispy chips! Though I make it regularly as a snack whether I'm dieting or not."

"Fast, DELICIOUS recipe that works to the letter. I actually used soy milk and soy butter and it still came out fluffy, golden and melted in my mouth. Mine were done in 11 min (actually a tiny bit burned on the bottom which is likely due to my oven, but in the future would place on the top rack and turn the temperature down to 400. Will plan to us..."

"I'm agreeing with everyone else: this recipe is superb and a very welcome treat to low-carbers (especially ones who live on the cold East Coast! I actually used chopped zucchini and summer squash (sliced in the food processor to add a little extra cushioning to the eggplant "noodles" I felt this helped make it a bit thicker and kept everything t..."

"These were interesting. I have to agree with some of the other reviews that it wasn't exactly what I was expecting - more like a popover than a muffin. I would also err away from using these for savory dishes as they are slightly on the sweet side. Though there shape/taste, actually remind me a bit of those rice cake snacks! So perhaps toasted wit..."

"This is a GREAT recipe - thank you for sharing! I actually halved it (and admitted the cocoa powder to make a smaller cheesecake, but you absolutely don't miss the graham cracker crust. I may even use this crust moving forward - whether I'm on South Beach or not!One thing I did differently, was broiled the crust for an extra 1-2 minutes, and th..."
