"The spices were spot on! The only change I made was to use soy yogurt to make it vegan. After I made these, I took some french bread, melted some Daiya mozzarella cheese on them, put the eggplant on top and finished with some jarred spaghetti sauce to make a vegan version of egglpant parmesan sandwiches.
