    "The spices were spot on! The only change I made was to use soy yogurt to make it vegan. After I made these, I took some french bread, melted some Daiya mozzarella cheese on them, put the eggplant on top and finished with some jarred spaghetti sauce to make a vegan version of egglpant parmesan sandwiches. Thanks for your easy and yummy recipe!"

    "Sooo good! I made them for me ( I am a vegan and for my non-veg boyfriend, who also loved them. These are so easily made vegan-just use two units of Ener-g Egg Replacer (3 tsp of powder mixed with 4 Tbsp of water in place of the eggs and the veggie crumble mixture holds up beautifully.     "So yummy-such a good comfort food for winter. Oh, and it was very easy too, which is a must for me. It makes alot, so I would suggest halfing it if you are just making it for two (as I was.
