    LinMarie says:

"Simple and REALLY good! My husband thought it was a little sweet the fiirst time I made it so I cut the maple syrup by half and it was perfect. I pan seared the mahi about 4 minutes on each side and it was so good!!!"

Reviewed I Lost My Noodles! Low Carb/South Beach Eggplant Lasagna

    Wednesday, Sep 22, 2010 on
     |  126 Reviews  |  By PattiCakeB
    LinMarie says:

"I had some eggplant from my garden, a couple roma tomatoes, a pound of ground buffalo, and some cottage cheese (which I subbed for the ricotta) that all needed to be used and this recipe fit the bill perfectly! To make sure it wasn't watery I used dehydrated spinach and bell peppers instead of fresh to absorb the extra liquid. I also made it in ..."

    Monday, Aug 16, 2010 on
     |  (1 person found this helpful) |  15 Reviews  |  By evelyn/athens
    LinMarie says:

"I broke up the salmon into very small pieces and mixed well to use it as a dip and I sliced cucumbers to use as chips. No salt needed since the salmon was already pretty salty and I used European style sour cream because it's thicker than regular sour cream. Excellent flavor!"

    Reviewed Kona Inn Banana Bread

    Monday, Aug 9, 2010 on
     |  (1 person found this helpful) |  46 Reviews  |  By kzbhansen
    LinMarie says:

"EXTREMELY moist! It needed about 55-60 minutes to cook all the way through and as suggested, I covered the top with foil during the last 10-15 minutes to keep it from browning too much. It's a little more sweet than I prefer and my bananas were really ripe so I may cut the sugar to 1/2 next time and see how it turns out. I also replaced 1/2 cup..."

    Reviewed Oatmeal Walnut Raisin Cookies

    Sunday, Jul 25, 2010 on
     |  1 Reviews  |  By Miryam MS, RD
    LinMarie says:

"These were really good! I was looking for a cookie with some sort of nutritional value and this hit the mark. I used spelt flour instead of wheat since that is what I had on hand and coconut oil instead of canola which gave them just a hint of a coconut flavor. Next time I think I'll try using agave and a little molasses instead of the sugars. ..."

     |  1 Reviews  |  By Miss Monica

"I love this hot sauce! I didn't even bother to strain it after simmering...I just blended it really well and added a little more vinegar (apple cider vinegar) to thin it out. It turned out great!"

Reviewed Hotter 'n' Heck Hot Sauce

    Sunday, Jul 11, 2010 on
     |  (1 person found this helpful) |  3 Reviews  |  By Red Hot Chili Peppers
    LinMarie says:

"Good stuff! I have a prolific habanero plant and this was the perfect way to use all those peppers! I used apple cider vinegar because the white stuff's a little too strong for our taste. No more store bought hot sauce for us! Thanks!"

Reviewed Light Cherry Amaretto Cheesecake Ice Cream

    Sunday, Jul 11, 2010 on
     |  3 Reviews  |  By Maito
    LinMarie says:

"Wow, this is good!!! The only changes I made were to leave out the egg yolks (since I just ran out of eggs) so increased the mascarpone cheese to 4 oz to make up for it, and I used coconut milk instead of nonfat milk. I also simply put all of the ingredients into the blender including half the cherries, then added the other half during the last ..."
