"I am from Texas, and sour cream enchiladas are a staple offering at many restaurants and I love them. I have never been able to find a recipe with a sour cream sauce that did not break apart into little curds, until now. "This is a very good recipe, and pairs really well with any jar of alfredo sauce. I generally won't use jars of alfredo unless it is in a recipe like this where it get mixed with onions, mushrooms, and garlic. Very yummy and turned out beautifully.
