"A couple of hints. I shred my potatoes and also onion together in my Cusinart shredder disc. The acid in the onion keeps the potato white and therefore can be done earlier in the day. "OK, this worked,,,these are really good. Perfect blend of the sugar / salt and baking powder. The recipe says 6-8 muffins so I assume these would be jumbo,,because the recipe completely filled all 12 wells of my muffin pan, which has generous wells. I t hought they would rise and flow over, but they didn't,,,stayed nice and mounded......love t..."
