"This is my go-to recipe for peach jam, been making it for 3 summers now. It is delicious, easy, and I love that you don't have to use pectin. I agree that it takes a bit longer than 25 minutes to reach the gel point, but I don't have a problem with that, you just need to watch it closely. It definitely does taste like "summer in ..."
