    "I made 24 mini muffins from this recipe and they have a delicious lemon & not too sweet flavor with a light texture. I made a few changes: 1/2 c Splenda, 1/4 c brown sugar, white whole wheat flour, fat free ricotta, lite maregerine instead of butter and baked them for 17 minutes. Will make again!"

    "This recipe makes for a tasty, moist bread. I added walnuts and about double cinnamon (no nutmeg on hand because I love the flavor/spicyness. The pineapple gives nice texture...you wouldn't know it's in it. I made 1 loaf and 11 large muffins from the recipe.
