"MMmmm, delish!!! Although it was good, the muffins came out a little on the 'oily' side. The next time I make it, will reduce the oil while increasing the amount of grated apples,increase the raisins, carrots and nuts to 2/3 cup each, and add some nutmeg. Thanks for sharing the recipe!"

"THis was delicious! Easy too! I didn't have any long grain rice on hand so I used brown rice instead. Omitted the potatos but added 2 cups of peas and a cup of diced carrots (looked so colourful!Substituted 2 cups of chicken stock for 2 cups of water to make it more flavourful. The result? "Thank you for the wonderful recipe! Was looking for a simple recipe and this was it! It is easily halved (was making pancakes just for one. LIght and fluffy. "Awesome recipe! Easy, fast, moist, not-too sweet muffins!Made 2 batches for a gathering of mothers and children and the kids ate them all up!
