"I was able to successfully scale this recipe back to 1/3. I used only 2 eggs which gave us enough for one dessert. I had never made creme anglaise before, but had it in restaurants. This recipe is easy enough for anyone to wow their guests or their DH on Valentine's Day."

"I love roasted veg so I decided to cut out the sauteing step & just roast them in the convection oven. I added an entire head of garlic cloves & used a Walla Walla onion. "I wanted to use portobello mushrooms, but at $6.50 lb, I just couldn't justify it, so I decided to try it with white mushrooms. I also used fresh spinach & parmesan. "I was surprised at how easy this recipe was considering some of the other Vij recipes are very time consuming.I had a change tomatoes to canned ones as our fresh were terrible.
