Japan
"This was so tasty. I cut back the spice and even the kids liked it. I made it with Japanese pumpkin (kabocha leaving the skin on and adding it early in the cooking process. It turned out great, like a stew. It would be good with fresh lemon juice and fresh cilantro if you like that. We served it over rice....so good. Lots of leftovers!"

"Delicious and easy! Just blend well right before baking. Very tasty and better without frosting."

"This was really good! The filling was not as rich as the sauce so there was a good contrast. I am sure this recipe would work with tortillas too for a more traditional enchilada. I think next time I will replace the sour cream with ricotta cheese. I think I would prefer the filling more without the strong sour cream taste. Also a 13 X 9 pan only f..."

"I made this with ground beef (cooked it, drained fat and then added back. After I completed the recipe as written, I decided it needed something to be more "enchilada-like" so i added about 8 ounces of sharp cheddar and about 8 ounces or so of velveeta block cheese. I also added a packet of ranch dressing mix. I liked it better this way and my fa..."

"Better than I expected! Very moist and perfect blend of spices. Made the house smell wonderful while baking. I baked it in a Jumbo cupcake shaped cake pan,"

"Good recipe. I used powdered onion and garlic and baked at 350 for about 20 minutes. I'll serve with marinara sauce and spaghetti. And split the batch and use the second half in another dinner with rice."

"This was good! I made it with roast beef cold cuts since I couldn't find corned beef here. I would cut back on the mayo next time to allow the flavors to come through a little more. I might even add more onion next time. Thanks for sharing!"
