"Excellent! The taste and texture of these GF muffins show the testing and effort put into the recipe. It is forgiving and readily accepts any type of extras. It's a staple in our household. I do, however, cut the baking soda and powder in half. As liquid, I'm a big fan of using half sour cream, half water. Thanks!!"

"So delicious!! I make a gluten-free version. To do this, you would use 1/3 cup white rice flour, 1/3 cup tapioca flour, and then enough potato starch to make 3/4 cup, along with 2 tsp of xanthan gum in place of the flour. Thanks a lot Memphis, this dish always gets rave reviews!"

"Absolutely great. It was my first introduction to real enchiladas, so I thank Anacoana25 very much! I've made these a number of times, and now I do a few things different than the recipe. 1 Corn tortillas instead of flour. 2 Up the roux mix and leave out the sour cream : Guess you'd have to change the name eh?"
