"I made this last night after a long day at work, and it was sooooo delicious! Quick to prepare too. I used amberjack, and it was a bit over an inch thick, so I cooked it a bit longer, even browning the sides of the fish to a beautiful golden color. The rice was a perfect complement. "This is a quick and easy fix! I garnished with guacamole, salsa, and sour cream. I think the wedges are so much better with the garnishes. I baked mine in the oven, but think they would be better in the skillet. I used roast beef, and would like to try this with grilled chicken....think that would really enhance the wedges. "I followed the other reviewer's advice and added the port to the strawberries and sugar. They are absolutely amazing.
