    "This was fantastic! Light, healthy, and delicious. I diced some red onions, zucchini, and spinach, then mixed it in a little bit of the marinade. Topped it on the cooked tofu and rice on the side. It's a keeper. Thanks!"

    "Hubby says it's amazing! I've made this many times now and we can't get enough. Once, I used frozen spinach with cooked chopped italian sausage. Another time, I've used fresh chopped spinach with chopped deli ham, and another with other veggies. I always leave out the nutmeg as I am not a fan. Such a great recipe. Thanks so much!"

    "AMAZING! Cooked italian sausage and frozen spinach leaves for this. Use food processor to minced sausage, spinach, onion, and garlic. Mixed with cheese in a bowl and then spooned into pasta shells. It was delicious and will go in my meal rotation. Love the ricotta cheese! Thanks for posting!"
