"Looking for a meatless alternative, this was great. I used olive oil and canned diced tomatoes but followed the recipe for the rest. I served this with wild/brown rice and a Greek salad and it was a very good week night dinner for DH and I. It was even better the next day, cold and reheated. Thanks for the post."

"Very nice flavor but I would recommend that if you are not serving right away to keep the sauce on the side. The cutlets have such a nice crisp coat and when they sit in the sauce they tend to get a little soggy. Thanks for the post."

"I used this recipe more for technique and inspiration. That being said, I used a combination of carrots, broccoli, zucchini and onions (chopped to same size. I also did not have the Bay Seasoning but had a Chef Paul Prudhomme%u2019s Seafood Magic blend and used it in place of all spices. I only used about 1 cup of butter and 1 cup of olive oil..."

"Excellent, easy and tasty. I did not have red onion, and I used a can of diced tomatoes (drained in place of the roma tomatoes. I agree that the shrimp should probably be removed from the sauce to avoid over-cooking. Thanks for the post."
