"Lovely simple side dish!! I made one serving using about three ounces each baby bellas and mini peppers, as well as about 1/3 teaspoon of dried tarragon. I sauted this in about a teaspoon of peanut oil. Thanks for posting!!"

"To be honest, when I first tried this, I didn't like it AT ALL. I thought it was much better after sitting in the refrigerator for a couple of days! Fresh, it was just too moist; not "fudgy," but "wet." I think that's because I used an entire 15-ounce can of black beans, which may have been too much. I used sugar-free syrup in place of the aga..."

"I adored this recipe! I halved it and used two ounces of whole grain penne, and decreased the olive oil to one teaspoon. For the vegetable broth, I used consomme; and I replaced the soy milk with almond milk. I didn't have any fresh parsley, so I used dried, and I sprinkled it over the final dish instead of mixing it in with the pasta and sauce..."

"I haven't made seitan many times before, but I've always achieved chewy, rubbery results. This was more spongy than anything else -- maybe I didn't let it cook for long enough? It was on the fire for a full two hours. I halved the recipe, using 3/8 cup of broth in the mix, and I got two cutlets. Perhaps if they had been thinner, they wouldn't ..."

"I halved the recipe, using three ounces of Lightlife chick'n strips and 1 ounce each carrot, celery, and Jazz apple. I omitted the raisins due to personal preference. Instead of Greek yogurt, I pureed 1/4 cup of cottage cheese with the curry powder and some Truvia. I don't really like celery, so I would omit that next time, but this was a lovel..."

"As an avid cottage cheese hater, I am always on the lookout for ways to enjoy it. This recipe was a nice way of disguising it! I halved the recipe and used almond milk and one egg white. But I still found that there was a LOT of soaking liquid that went to waste. Next time I may cut down on that. Thanks for posting!"

"Quick and easy! I replaced the oil with applesauce, the egg substitute with two egg whites, and the soymilk with almond milk. I thought an entire tablespoon of cinnamon sounded like a lot, but I'm glad I included it all; I loved the infusion of cinnamon flavor. I got four jumbo muffins. Made for PAC Spring 2010."

"This is a quick and easy way for me to add more protein to my diet! I've never done it with chocolate protein powder before, though. I think I'd add some cocoa powder next time because the chocolate flavor wasn't very strong. Be sure that there are no clumps in your protein powder before stirring it in, or you'll find yourself biting into a con..."

"I was honestly prepared to dislike this recipe; I don't like eggs, and I don't like cheese! But I was pleasantly surprised to find that it was fantastic. I did make quite a few changes to suit a kosher diet: I skipped the butter, and I made a single serving using a quarter of an onion, about two ounces of canned mushrooms, one slice of Lightlife..."
