"yummy. I used honey, all purpose gf flour. I might add a tad of Xanthan next time. We put cashews, currants and coconut in. They did end up puffy rather than thin and crispy even though I used melted coconut oil. Definitely a keeper!"

"Great texture and flavor. I used Ghee instead of butter (dr's orders and they were kind of greasy on the muffin liners. I might use less next time or use coconut oil. And I added walnuts. "I had to make a few substitutions (stevia and Xylito, Coconut oil and only had 1 egg so used flax. Even with all those substitutions it was really good. I baked it in little loaf pans and it still took close to an hour to cook. Definitely a 'saver'"

"Actually I forgot to add the oil, so the mixture seemed pretty dry. I added an egg (instead of re-reading the recipe, duh and they turned out pretty yummy! I gave it 5 stars because they are yummy even when I goofed up. Next time I will try with the oil :"

"I made several substitution and the muffins were still delicious. I appreciate recipes that allow for some subbing! I used Red Mill All-purpose flour plus 2 t xanthan gum, used 1/2 splenda and 1/2 molasses, and 1/2 apple sauce plus 1/2 olive oil. I added walnuts and chopped dates for fun. Muffins are delicious!"

"Good recipe; in my opinion the best recipes are ones that you can tweak w/o ruining the end result. And I often have to tweak because of multiple sensitivities here.
