    "I am a HUGE cucumber fan so I wanted to try this dish.I was very pleased. It is refreshing and I loved the lime flavor paired with the cucumber. I used an english cucumber so I could leave the skin on. I also used the best Portuguese olive oil that I had and it was perfect."

    "This recipe is fantastic! The jerk seasoning pairs really well with the pineapple and coconut rum reduction. This was sweet and spicy which is a pairing I love.I paired this with a fresh salad that I made with red peppers, celery, carrots, english cucumber, fresh romain lettuce, crumbled turkey bacon and a nice light vinaigrette dressing.T..."
