"I thought these were very good, however I was using a dark cookie sheet at 400 for 12 minutes and my cookies burnt on the bottom. I would recommend checking them after 10 minutes.Very good recipe though! I did substitute the baby food for 1/2 mashed banana.Made for May 09 V*gan/vege Recipe Swap."

"My whole family liked this one :] I wasn't sure if it would be overly spicy with the 2 tsp. of ginger but it added just the right amount. Used a dark 9" square pan and cooked exactly like you indicated, but the pone turned a dark color. Cut this into 9 side servings and everyone enjoyed. Made for V*gan Recipe Swap November 2008. "I used vegetable broth instead of chicken broth for the V*gan Swap November 2008. This was really easy to put together and brought both the pumpkin and corn flavors together in harmony. I used one 16 oz. bag of frozen corn instead, and it still turned out great. I also upped the onion a bit because my family enjoys onion."

"I ended up halving the recipe, and just cooked the tapioca in the coconut milk and saved some time. I also subbed Splenda for the sugar, as I'm diabetic.
