"This was so delicious and healthy also..great combination! I made this as stated but used fire roasted tomatoes as that is what was in the pantry. I did grate a tiny bit of parmesan on the top of mine and also "blessed" the soup with a drizzle of olive oil right before eating.

"I added a red pepper along with the other vegetables and used chicken broth instead of vegetable stock. I also had too much liquid at the end of the cooking time so I followed another reviewer's guide to put this in the microwave to dry it out some. Will use a little less liquid next time.
