"I halved this recipe and made it in an 8x8 casserokle dish and that seemed about right. The eggplant was very good and not at all bitter. We are not a real big fan of ricotta cheese but this was tasty. Will make again. Made and reviewed for PAC spring 2008"

"My wife and I really enjoyed this. It was very easy to make and delicious. I did make some changes. I used ham instead of pepperoni and I used a little mor onion (1/2 small onion and I used cheddar cheese instead of swiss and lastly I added some fresh mushrooms. Was very, very good and I will definately make it again."
