Reviewed Grilled Maine Lobster Tails Smothered in Cascabel Chili Butter
     |  (1 person found this helpful) |  By Kiss The Cook!

"Loved it, great compound butter recipe, especially for a boy from NEW YORK CITY... get a rope.. Seriously, it was quite lovely. We had the lobster tails with smashed purple potatoes and fresh Florida green beans. It was a lovely meal, and we think the Cascabel chili butter will work well with many entrees. "

"This was excellent! I substituted fresh cuban oregano from my yard rather than dried. I only had a red bell pepper so used this instead of the green pepper. I served this on top of 4 small toasted corn tortillas topped with 2 tablespoons each refried beans and topped with shredded manchego cheese. It was very delicious-we enjoyed it for brunch but..."

Reviewed Pigeon Pea Rice (Arroz de Gandules
     |  By Kiss The Cook!

"We loved this, although I did add a couple of different spices, smoked paprika and ground allspice. Other changes, used red bell pepper instead of green. This was the first time I had tried cooking the dried pigeon peas and they turned out great. The best thing was the wonderful warm, spicy aroma coming from the kitchen. I will definitely make thi ..."

    Reviewed Foolproof Standing Rib Roast
     |  (1 person found this helpful) |  By Kiss The Cook!

"I couldn't believe this worked so well but it was absolutely perfectly done. I turned the oven to Convection Roast, 375, and followed the directions exactly. We seasoned only with freshly cracked pepper, sea salt, and granulated garlic. I also love this method-doesn't need constant attention! Thanks Paula, it was indeed foolproof. "

"This was a great recipe! We are trying to eat healthier at our house and don't want to use the canned, processed foods like cream of ? and processed cheese, so this was a great recipe for us. The only changes I made were to use brown rice instead of white, and instead of the plain cheddar and cayenne, I used a Habanero cheddar and omitted the caye..."

"This is a great recipe. I tried it very spontaneously this morning because I had an apple I needed to use. I was a little nervous about no baking powder or salt in the batter, but it was perfect... puffy, crispy edges, perfectly done in the center, and lovely caramel coating the apples on the bottom. Definitely a keeper."

"This is a wonderful recipe! We had some large prawns and I followed the recipe exactly except for one thing-I don't like cilantro and had no parsley so i used fresh basil instead. The spice blend is wonderful-not too anything, not too hot, sweet, salty, spicy, just right! Try this, you won't regret it."

     |  By Kiss The Cook!

"This was a wonderful recipe, however I did work on it all afternoon.I agree with the previous reviewer regarding time. I made the sauce in the afternoon, took around an hour. I prepped the eggplant, ricotta mixture, and grated cheeses after that, another hour. I breaded and fried eggplant, another 30-40 min. Prep time to put the casserole together ..."

"Great Recipe! I followed exactly as written, only adding some sanding sugar after baking. The recipe actually reminds me of my pound cake recipe with fewer eggs. Everyone at work loved them-I used fresh blueberries."
