"This was very good. It was a great way to showcase the fresh vegetables and herbs from my garden. I used extra lean ground beef and I didn't change much, as the recipe is appealing as written. I saved a step and did not boil the eggplant. Instead, I sauteed it until soft when I did the peppers, onions and garlic. It was very good this way. I..."

"Our family loved this dish as a side with our Christmas ham. I made it as listed with feta, parmesan, and low sodium chicken broth. I substitited half and half for the heavy cream (because I had this on hand for something else. It turned out perfectly. I will definitely add this to my collection. Thanks!"

"We enjoyed this with the in-laws! Quick and easy, although I did cheat with the crust. I used partially overlapping granny smith apple slices that I cut with the apple tool mentioned by raisingcain (I love mine too!. I used ready-made shortbread crust from the bakery aisle. Delicious!"

"These were good and very simple to make! I made them "green velvet" for my daughter's preschool class for St. Patrick's day. They were a hit. I used 1 one ounce bottle of green food coloring in place of the red food coloring. The cupcakes were plenty green with this amount. I may even use a little less next time. Thanks!"

"Very good and simple. I especially liked that the rice and meat didn't need to be cooked before assembling the casserole. When I make things in one dish I like there to be as little prep work as possible--to me that's the whole point! I used a mix of instant brown and white rice because I wanted to finish both boxes I had open. Next time I'll..."

"We loved these! Thanks for posting this one! We found them very flavorful without being too spicy for my little ones (who gobbled them up. I doubled the sauce and used it all, as another reviewer suggested. This made them nice and saucy, which we like. I made them with multigrain flour tortillas, light sour cream and used a shredded mexican ..."

"These were a big hit! No reason to make "white" pancakes again. I made as listed but used agave nectar instead of honey and sour milk (2tsp lemon juice mixed into 1 cup milk instead of buttermilk. Oh and I added 1 tbsp of vanilla and some chocolate minichips. . .mmm!"
