    "This was absolutely wonderful! My husband is a meat eater and he was skeptical, but he went back for seconds. I think next time I will use a little more ricotta, just b/c I like it and it makes it fluffier! I also made my own marinara a day ahead time. It tastes really good if you have a good sauce! He said it was very fresh tasting and light. ..."

    "My husband and I loved this salad. I know it's good if he'll eat it 2 days in a row. I didn't have time to make the dressing, but I did find a light version of blue cheese dressing by Ken's. I mixed 1 and a 1/2 tbls of dressing with a tablespoon of nonfat plain yogurt and it was delicious. I love Ellie!!!"
