"I have a prize winning banana bread and this recipe is very close to it.We loved it! I baked 4 small loaves.Ate one and gave the other 3 as gifts.Next time I will use real butter and beat the egg whites to stiff peaks and fold in.If that doesn't make it even more delicious, I will switch back to the original recipe.Love the "hands on"..."

"I cooked this last night and we loved it! This what I am making for Thanksgiving instead of sweet potatoes. YUM!!!!!!!!!! I hava tip for people who have arthrits and have a hard time cutting this hard to cut squash. Use a sharp knife and tap the blade with a wooden mallet to cut through (on a cutting board It saved my hands last night. YaYa"

"We really liked this recipe.My husband has a problem with fried things so I baked them in the oven on 400 for 25 minutes.They came out nice but next time I will probably add some kind of oil to the outside.Maybe sear in a nice buttered and oiled pan then pop in the oven to finish.I mixed some cayenne pepper and cilantro to the tarter sauce..."
