Reviewed Chicken Enchilada Casserole, Diabetic
"I have made these twice now and remember to rate this. I'm from NM and pretty picky. I was surprised when this simple recipe hit the spot and is diabetic friendly (my G-ma is a diabetic). 1000 cool points! :)"

Reviewed Musakhan (Baked Chicken over Bread)
"I made this recipe from a website about three months ago and it's the best chicken dish I have ever made hands down. I'll be making it again soon and will post pictures! My friends loved the way the bread tastes with all the seasoning. I don't use chicken quarters, but rather leg quarters."

I have always loved to cook, mainly because I love to eat! I learned how to make French Toast as a kid and it still one of my favorite breakfasts. If I eat out and want to re-create something or think I can make it better (hehehe), I check out my favorite recipie sites and get going. I also enjoy cooking to entertain; some of the best parties are at my house ;)
Breakfasts: French Toast, eggs over medium with toast, poached eggs, crepes, Belgian waffles! . . .
Mains: Brisket, chicken marinated in anything, "stew meat", blue cheese burgers, T-bone steak . . .
Sides: garlicy roasted vegetables, garlicy masshed potatoes/parsnips, cream or potato based soup, lentils
Desserts: creme brulee, rhubarb pie, Kanafeh
I'm famous for my stew meat and kanafeh
Favorite resaurant: Sotto Mare, http://sottomaresf.com/
