Reviewed Broccoli Chicken Rice Casserole - Low Fat
"Made this with Uncle Bens Wild rice with garlic blend. Also one of the cans of soup was cream of mushroom. Didn't add anymore salt or garlic. We had to cook it at least 2ce as long cuz the carrots wouldn't get done. This caused the chicken to get over-done. Really good flavor, though. Will cook the carrots next time or cut them up smaller so ..."

About me???? Okay. I have a husband, 2 kids and a lizard. Not happy about the lizard, either. I am recently going back to work after more than 10 years as a stay-at-home mom/wife. I've found that with the kids busy all of the time, it is time for me to get back out in the world and speak with adults. I love to read, right now I'm on a memoir kick. I just recently read "Glass Castle" which was great and am now reading "Black Boy" which is listed as one of the top 100 non-fiction books. I basically like anything with an "artsy" flair to it. In addition, I work out/run/pilates/weight-lift/whatever, on a regular basis. It has been a lifelong habit for me and so now if I don't do these things I feel as though my day is incomplete. I guess that is good because it helps offset my other favorite thing which is going out to eat. My husband and I have recently found Indian food. Love the way it tastes, hate the way it looks. Not very healthy, either, so the exercising comes in handy. We also love to attend the kids sporting events and school functions. What proud moments for us parents.
I enjoy cooking, but strictly as a fun hobby. I also like to try different recipes, but unfortunately have to make sure that they don't have any "wacky" ingredients as the rest of the family won't eat it, as I'm sure is the case with most cooks. Whenever I need a recipe or want something a little different than normal, I search this site first. If I can't find it here, chances are I won't find it anywhere. I am a meat and potatoes girl (hello....I am from the Midwest!). I absolutely love just about every vegetable and will try most all of them. I find that even if you don't like a certain vegetable, there is probably a way you can cook it that will make it taste better. I rarely make any desserts unless I'm forced. I'd rather spend my calories on the main course. I also rarely cook breakfast, only on holidays or, again, when forced. One last thing I enjoy making are horsdeurves. We love to entertain, so when I get a good appetizer and everyone rants over it....well....nothing could be better.
