Reviewed Gnocchi With Butternut Squash (squacchi Perhaps!)
"This was DELICIOUS! I cheated and got a container of pre-cut butternut squash, which made the prep time practically nonexistent. I also used lots of fresh rosemary, and reduced fat feta. Last night we had it as our main dish with a yummy arugula salad, and I can't wait to have the leftovers :-). SO good, and so easy. Thank you for sharing this!!"

My first cooking experience was taking as many spices from the shelf as I could reach and mixing them all together in a huge bowl. Needless to say, my mom wasn't impressed with my concoction, but at age 3, I thought I'd make a masterpiece. Since then, my approach to cooking has been a mixture of "trial by fire" and my mom's adage of "if you can read, you can cook."
I adore Thai food. I just love the way it looks, smells, tastes. I have a weakness for fresh basil, and grow it constantly. Garlic tends to frequent my ingredient list, since I feel that a little (or a lot... just got a new garlic press and can barely put the thing down) garlic goes well in just about anything. What am I "famous" for? My family knows to look to me for healthy food ideas. I am constantly hunting for ways to make things a bit more health conscious, without compromising taste.
