    "This was a different take on salmon. We like the taste of apricot with salmon, and the vinegar gave a nice tang to the dish. The bread crumb and walnut topping added a good texture - but the crumbs remain crumbly and loose because nothing binds them to the nuts.     "Very simple and satisfying meal! By making it with 1 percent milk and "fat free half and half", I ended up with a rich tasting sauce which did not add loads of fat and calories. As we are on a low-fat/sugar/sodium/acid diet, this worked great. It will appear regularly in the dinner rotation!"

    About Me

    I have many great memories of cooking and baking alongside my mom growing up. Her "Bible" was her "New Settlement Cookbook." I have a facsimile copy I still use for reference. When I first moved to Japan as a teacher/missionary in the seventies, I needed a basic cookbook of my own and bought a Betty Crocker which I keep close to me at all times.

    I am a Lutheran pastor, stepmom, stepgranny & now stepgreat-granny! I enjoy watching Tiger Woods play golf (thus the "tora" part), the Chicago Cubs and the Fighting Illini of the University of Illinois. My husband is the love of my life and, being diabetic, has special dietary needs. Our cat, Hercule, is our "kid."

    Favorite Foods

    I love comfort foods... sugar free pies for my husband... and Japanese food! I enjoy baking, especially sugar free fruit pies, custard and pumpkin pies. My favorite restaurants are German or Japanese. My homemade chicken and dumplings are ever popular with the kids, and I especially love producing the great big Thanksgiving or Christmas dinner.
