    "I'd make this again, but not as written. I made it as written for my first try.

    I used mild salsa, one of my favorites. I think the sweetness from the ketchup, and from the honey was too much for the dish. As another reviewer suggested, I think I'd replace ketchup with tomato paste on the next go-round.

    I'd cut back the honey..."

    "First time cooking scallops - used this recipe. Had issues keeping the breading from breaking up as I turned them while cooking. Wilted spinach was too vinegar-y for our tastes.

    I don't think I would make this again. Even tweaked."

    "How have I forgotten to rate this? I've made it many times.

    I love the flavor. The texture can be "too soft" for me. Which I combat by adding a handful of chickpeas or pine nuts.

    Great side dish!"

    About Me

    For starters, my name is Jen. I work, live and play in the beautiful Roanoke Valley. Its not too big, not too small - and surrounded by beautiful mountains.

    I'm a transplant from West Virginia, moving here for a job after college. I'm a mechanical engineer by education - daylighting as a controls engineer.

    This site has been a great resource for me. I didn't have much guidance in cooking growing up. I've had my eyes and tastebuds opened to foods I didn't know existed.

    Favorite Foods

    I have no favorite dish to cook - I tend to use what I have in the cabinets. My favorite thing is not having to go to the grocery store!

    I'm family-reknowned for my whole-wheat cottage cheese rolls. That - and I'm the diabetic friendly baker on demand.

    My new favorite restaurant is Tazaa here in Roanoke. Every dish is nothing short of a miracle!
