Shared Recipe Make-Ahead Mini Quiches
"Inspired by a recipe in a Weight Watcher's pamphlet. Easy make ahead breakfast or snack. Like a crustless quiche or a savory muffin. Very easy to vary this recipe with different veggies or herbs. Make a batch and put them in the freezer. 3 points per serving."

I am married with grown-up daughter. Although I have a Latin name, I grew up in the midwest. My mother was a farm girl who fell in love with a Panamanian dentist. I have enjoyed getting to know more about central American food since I have moved to California.
I am a semi-retired software engineer. Volunteer work takes up most of my time. I am passionate about Unitarian Universalism, small group ministry, and most any crafty thing expecially knitting and paper crafts.
In the last year, I have lost over 40 pounds on WeightWatchers.
Bread is my favorite thing to make, especially yeast breads. I like to make them by hand or with my kitchen-aid mixer, but will cheat and use my bread machine when I don't have much time.
I love anything ethnic: Afghan, German, Indian, Thai, Salvadorean
I don't like desserts much. No chocolate, ice cream, cake or custard. I like a few cookies and pies and that's about it.
