"I add carrots & celery, a can of white beans too. I have never had the Olive Garden version so I am problably messing with their recipe but we love it this way. I also use either fat free half & half or a can of fat free milk. I needed a recipe using Kale since I got a bunch of it in my Bountiful Basket. Never cooked with it before so I went serchi..."

    Reviewed Mexican Casserole

"Very good! I did use corn shells & fried them in a bit of oil before cutting into triangles but otherwise kept to the recipe. I have a similar recipe but it does not use enchilada sauce & I think that is a good addition. We really enjoyed this! Thanks for posting :)"

"Oh thanks much, I have made tortillas but didn't know how to get the flavorings, this will be terrific & I will also take the advice of Fairy Nuff & add a bit of tomato paste & herbs! Your basic recipe is very similar to one I use with the exception of using canola or olive oil for the fat. Works surprisingly well. Thanks again!"

"This is the best potato soup I have ever made ( or eaten!)
My husband didn't even put crackers in it. He said it was too good for crackers. I will cut the sour cream to 1/2 cup next time, but other than that it was perfect. Thanks for a keeper for sure!!
Update on the above review, I have made this numerous times & have changed it up a bit..."

    About Me

I am a retired CNA, now in the Candle selling business. My husband and I recently moved to a small community in Montana, so I don't have great access to a variety of ingredients. This site is great for finding recipes that have ingredients that most have on their shelves. I love the variety of ideas and check everyday for something new to make.
I like to scrapbook, camp and spend time with my 5 grandchildren.

    Favorite Foods

I like anything Mexican. We eat a lot of fish if I can find any fresh. Love to make soups in the winter.
