I work full-time and pursuing my Master's degree so I don't have a lot of time to prepare meals. I cook 3 large meals on the weekends and make it last throughout the work-week. When I'm really busy, I buy prepared frozen vegetables (stew vegs, stir-fry vegs, etc.). When I get home from work, we only need to make a pot of rice and re-heat the meals I prepared over the weekend. Simple and stress-free.
