    About Me

    First of all, I'm very sorry for my English mistakes, my first language is French :)

    So, a little about me : I'm an aspiring musician, that's what I'm studying in college. I mostly play the accordion, but I also sing and play some piano. I absolutely love what I'm doing. I like a variety of styles but my favourites may be trad, funk, jazz, electro, celtic, world and classical (such as Beethoven, Rachmaninov and Chopin). I plan on becoming an arranger/composer, since I love the intellectual and personal aspects of music and since I'm good at it.

    I also love nature : bugs, plants, sceneries, weather, animals. Sometimes I become obsessed about some aspect of nature, buy guides or encyclopedias on the subject and go through them in a couple days. Even though I react intensely to mosquito bites, I still like to go in the woods, swim in a lake or river, look at the insects and pick some herbs.

    When I cook, I try very hard to go by my values of repect and integrity. Which, to me, means food that has the least possible negative impact on ecology, that does no harm to the sentient (such as food produced by slaves or un-humane eggs) and that is good for the body (healthy) and for the mind (tasty). As a student, though, I have a very tight budget and sometimes have to step on these values.

     

    Favorite Foods

    It is important to note that I am intolerant to gluten, dairy and soy, and that I'm on my way to becoming a vegetarian. The only animal products I still use for the time being are eggs and honey.

    I love deserts in moderation. I wouldn't eat sweets every day. I like sweets that pack some nutrients, such as molasses, whole grain flours, fruits, nuts.

    Since I can't eat soy or gluten, I have to get my protein in legumes and nuts. So I use flours made of hemp, lentils, garbanzo and fava beans, almonds. I also try to find new tasty ways of eating my daily legumes, such as a good variety of dips and spreads, or including them in ratatouilles, chilis, soups. I'm not a fan of spreading nut butter, so instead I add nuts in my quickbreads, muffins, cookies. Including nut butter in a dough or batter is something I appreciate, too.

    Sometimes, I do use dairy substitutes for things such as cheese, whipped cream and butter. Normally, the milk substitute I drink is almond beverage (important for the B12, calcium and vitamin D).

    I love meals made with lots of veggies, whole grains and legumes. I also like to play with herbs and spices. I could put garlic everywhere and I have a weakness for eggplant, zucchini, avocadoes and cilantro.
