    Reviewed Cream of Chicken Tortilla Soup

    "This may not be an honest rating because I made so many changes, but the idea was perfect, and even with a bunch of modifications I made a huge pot of soup that, like so many other tomato-based recipes, tasted so much better the second day. Whatever you do, make a double batch! And have plenty of cilantro on hand...with tortilla chips and shredded ..."

    Reviewed Pumpkin Oatmeal Drop Cookies

    "I used fresh pumpkin, and I think that made these cookies too sticky; even with Pam they stuck really badly to the pan. I was doubling the recipe, so after 2 pans that turned out flat and breaking, I switched to baking the rest as bars in a 10x15. Those were better, though I lost the bottom on a few. However, I love the flavour, and will make again..."

    "Very good, yet different with the higher egg concentration and less sugar. We prefer the carmelly sweetness of sucanat, but this was still a yummy treat, great for using up excess eggs. I doubled the recipe, only had one serving myself, and had 3 kids fighting over the leftovers."

    "I wasn't sure about adding the raisins; but went ahead. My friends and I did not care for it. I might try again with omitting the raisins and only halving the glaze, as I found the glaze too sweet, after sprinkling mini choc chips after baking, which added to the sweetness."

    Reviewed No-Bake Cheesecake Pumpkin Pie

    "Excellent! I made my own crust from spice cookies where my husband accidentally used all blackstrap molasses. The cookies had been inedible on their own, but they made an unforgettable crust--so good. I used stevia and vanilla w/whipping cream, and it worked fine. I love pumpkin, and will make this again, next time doubling for a crowd!"

    About Me

    I live on the edge of the Canadian Rockies. My husband and I are missionaries working with First Nations people. For fun? I don't have to go far for that--I homeschool my 6 yr old boy, 5 yr old girl, 2 yr old boy, and another coming in Oct 2007. They are more entertaining than anything else in the world. My all-time fave cookbook? Any with good pictures! That's the only reason I would still buy a cookbook--you don't get many pics on the internet recipe sites (unless I haven't been around much). My passion? To see people come to the knowledge that they are loved by the Creator of the Universe, who sent His only Son Jesus to die for their sins. He is the Truth that sets us free. It's a good feeling to be free and forgiven. Eternally. If I had a month off--I guess at this point in my life I can't envision being without my precious family that long...but later in life I hope to enjoy drinking an entire cup of coffee w/o interruption! Any fresh dark roasted, fresh ground, fair trade coffee will do. I would rent a castle in Italy, or travel, travel, travel. And I love to dance--line dancing (or other kinds!)

    Favorite Foods

    Cook? I hated cooking when I found 'zaar 4 years ago. I came here b/c I needed all the help cooking that I could get. Now I have found a good crop of "keeper" recipes that have put me on the map as a decent cook. I'm famous in my family for good bread! My fave restaurant is any authentic Italian joint, esp. an elegant one with excellent coffee and tiramisu. I miss Chicago, but I enjoy getting free organic red raspberry leaf "tea" here in the mountains...just watch out for bears...
