    "Very tasty. I made a few modifications. I used boneless skinless chicken thighs instead of breasts since dark meat tends to soak up more of the flavor of the sauce than white meat.     Reviewed Salmon Croquettes

    "Sorry to ruin a perfect score but these were extremely greasy. I made them with the potatoes and was so excited that I had finally found a gluten free version of salmon croquettes. The taste was good but potatoes soaked up the oil like a sponge. Will try it again with gluten free crackers or go back to using corn meal as I have done in the past."

    About Me

    I am a child of God, a wife, and a mom. By career I am a Doctor of Chiropractic and a violinist on the side. I am a native of southern N.J. but have been living in S.C. for almost 21 years now. I have been cooking since age 5. My late mom was a junior high school home economics teacher (do they still teach that? and those were some of the best years of my young life. I would stand on a chair and together we would make culinary magic and talk about any and everything. She died when I was 9 but my love for cooking has lived on. I am a health nut and cook mostly from scratch using as many organic foods as we can afford. I live in a beautiful country home with my husband and 2 year old son who both enjoy eating. My son is two and has never had junk food other than the occasional ice cream and baked goods which I make from scratch and sweeten with fruit, honey, or agave nectar. I love this site and am always trying out new recipes that I have found here. I have not posted any recipes yet since I don't really have definite measurements for my original recipes but I hope to one day quantify some of them and post them here.

    Favorite Foods

    As much of a health nut as I am, I cannot pass up a nice grilled steak with a side salad and maybe a baked sweet potato. I also love salmon steaks (preferably broiled or grilled). I am known to my family as the 'Leftover Queen" because I throw nothing away (as long as it is not spoiled or moldy). To me, leftovers are a casserole, stir fry, soup, or stew waiting to happen and I can be very creative. I also love just about any type of fruit and especially craved it when I was pregnant. Other favorites are ice cream and chocolate. Ok... let just say I love food... period.
