"What wonderful flavor! The sugar snap peas are nice, but for me it's really the well seasoned broth that makes this soup. The lemon zest is an inspired touch. I'm dieting and was looking for something light to make my stomach feel full without adding calories and this fills the bill. Thanks, Ellie, for a winner that will be with me a long time!"

"Despite living in the South for years, I've never had corn pudding and wasn't sure what to expect. It turns out to be custardy, slightly sweet and filling. Also lower in fat and calories than I'd imagined. I used skim milk (Parmalat and only 1/4 tsp salt, so it was probably even lower in fat & sodium than shown in the Nutrition Facts, and that wo..."

"I made this with Splenda, omitting the food coloring. I meant to make it last for two meals, but couldn't resist gobbling it up on the spot. Then the next day I was thinking of it all day and wishing I'd saved some, so I ended up making another batch and then gobbling all of that up. Ba-a-ad echo! Goo-oo-ood Paula for such a great dessert."

"The sodium count would alarm my family doctor no end, so I used light soy sauce to try to cut down a bit. Of course, the glaze is the whole story for this dish and it's pretty darn yummy. It's also nice to have a chance to use my fish sauce."

"Really interesting combination of flavors and VERY REFRESHING! I wasn't able to find fresh cilantro at the store, so had to substitute dried, but still good. I'll definitely make again."

"I made this yesterday in two phases. I did steps 1-5 before going to work then finished up with steps 6 through 12 after getting home--nothing easier than that! I like the fact that the recipe uses cottage cheese rather than ricotta, though I imagine it would work with the latter, as well. I did substitute Italian herb seasoning for the straight ..."

"A yummy, quick and easy snack or breakfast. I made one just as described. Then I got the idea of toasting the bun in the oven and placing the cheese (cheddar, in my case on just a few seconds before pulling it out to let it melt a little bit. The second time, I also added a bit of hot pepper sauce to the eggs. Good and satisfying either way."

"Oh boy, so easy and so good, how can that be with so little fat and calories? The skim milk works just fine (I used Parmalat. The only changes I made were to use regular instead of whole wheat noodles, plus I threw in the tail-end of some black olives and some chopped pimients which I needed to clear out of the fridge--just 3-4 Tbs of each. "At the end of the cold season, I have a lot of potatoes, onions, carrots and squash left over from our winter share from the local organic farm. This was an excellent way to use up some of that. I especially loved the seasoning combination, which tasted and smelled heavenly. Filling and delicious, and the leftovers are even better."
