"I made this with Splenda, omitting the food coloring. I meant to make it last for two meals, but couldn't resist gobbling it up on the spot. "The sodium count would alarm my family doctor no end, so I used light soy sauce to try to cut down a bit. Of course, the glaze is the whole story for this dish and it's pretty darn yummy. It's also nice to have a chance to use my fish sauce."

"A yummy, quick and easy snack or breakfast. I made one just as described. Then I got the idea of toasting the bun in the oven and placing the cheese (cheddar, in my case on just a few seconds before pulling it out to let it melt a little bit. The second time, I also added a bit of hot pepper sauce to the eggs. Good and satisfying either way."

"At the end of the cold season, I have a lot of potatoes, onions, carrots and squash left over from our winter share from the local organic farm. This was an excellent way to use up some of that.
