I love all food (yes, that included meat at one point). However, in this day and age, I feel that my eating habits should go alongside my desire to promote a healthy environment & animal rights. I choose to eat vegetarian and vegan for both environmental and ethical reasons. I'm not a die hard, chain myself to a tree type of person - but I do believe that we can each help to improve our environment for our children...and their children. One way I do that is with the food I prepare and devour! :)
I make vegan lunches for the kids and they are the hit of the classroom! Creative, colourful and SO MUCH FUN to make! Who knew that making lunches could be such a wonderful, loving thing to do!
