    Reviewed Quick Peach Cobbler

"This seems as though it is not quite the recipe I was looking for. It tasted good and was easy, but the texture was looser than I thought it would be. I used 2 15-oz. cans of peaches. I baked this in a 9X13 pan (the recipe doesn't specify) but I think it needed to be in a smaller pan. It was completely done and about to burn after 50 minutes."

Reviewed Soft & Chewy Chocolate Peanut Butter Cookies (Cake Mix)

"These turned out really yummy. I only had to mix them for the first 2 minutes using the stand mixer. The dough is really easy to work with and I didn't even need the sugar to make the crosses with. They are very soft after 8 minutes, but that yields the perfect chewy cookie. They taste a bit like peanut butter brownies."

    Reviewed Pecan Maple Bagel Schmear

"This is delicious and easy. I used my KitchenAid mixer with the whip. Worked out well. I didn't need to add any milk even though I use regular cream cheese. Even though I normally prefer savory spreads on bagels, I would probably make this again."

Reviewed Yummy, Spicy Black Beans and Rice

"This was really easy to do. I used the ketchup (which I never would have thought of using!). I also used the tomatoes. I added cooked brown rice - stirred it in. Not sure if anyone was really excited about it, because there was a lot left, but I think it was pretty good."

Reviewed Slow Simmered Spaghetti and Meatballs (Crock Pot)

"Really easy and good. I used packaged meatballs, but would consider trying this with frozen homemade meatballs also. Smells wonderful while cooking, and eliminates the need to watch a slow-simmering sauce."

    About Me

I still love to cook after all these years, but despite my best efforts I am still a klutz in the kitchen. Right now it is grilling season and time for cold salads. In the winter (here) I like to make soups, stews, and casseroles. I hate crockpot food but it is so easy that I keep trying to find recipes that I will eat. After a trying time and tons of heartache, I am no longer in the foodservice industry. Now I am the safety manager for a small metal fabrication company. It's interesting. I am also still very homesick for Florida, but the spring and summer weather here helps.

    Favorite Foods

Everything!!! I am very fond of oriental dishes, especially Vietnamese. Also large slabs of beef, and fried foods. Chex Mix! (Anyone tried the new sweet & salty flavors?). Chips w/California dip.

That was my original list however many years ago. Not much has changed Wink. However, after knowing for all my life that dairy products do not do good things for my body, I have finally decided to give them up. So now I am looking for new favorites. I also quit drinking coffee and have mostly eliminated pork from my diet.
