I live in the United States but am originally from Belize in Central America. My heritage is Palestinian, Greek and Spanish.
Belize was a British colony at the time I lived there so my upbringing was heavily influenced by all things British. Whilst I was growing up I never learned to cook. I have an older sister, by 10 years, and she was always the kitchen helper. When I went out into the world I lived off pasta, grilled chicken and boxed convenience dinners.
Spending thirteen years in the hotel industry afforded me the good fortune to travel extensively. I've always been drawn to learning about different cultures and food seems to be the most inherent way of doing so.
I met my English husband while working and living in Eastern Europe. He is a trained chef and is really my inspiration for learning to cook.
Although he never complained about my lack of skills, I realised that it's not too difficult to make good, helathy food that doesn't come out of a box. He never taught me to cook...I sort of learned by watching him, reading his cookbooks and using my imagination. His patience tends to run thin when watching me use a kitchen knife. :-)
Mind you, I am nowhere near as good at cooking as he is. My cooking tends to be more basic whilst he is extremely creative and can create nine course dinner parties in the blink of an eye.
We now live in the U.S. with our two daughters. He is still a chef for a worldwide hotel chain and I am a banker by day....exotic housewife and cook by night. :-)
All of the recipes I have posted have been made and tested by me.
I hope you enjoy them as much as I do.
Japanese, Chinese, Indian, Thai, Greek, African......really anything!! Although a good Sunday roast dinner is comforting as well.
