"brined for 24 hours, used foil over the top of the turkey after the first 30 min @ 500. set the turkey on a bed of celery and carrots in the foil pan, add 2 cups water to the bottom of the pan to prevent early burning.
this was the moistest (yes! white meat on a turkey i've ever had...i was expecting a great result but it turned out even bet ..."
